Mediterranean Vegetable Pasta

This tasty pasta and vegetable dish makes a great light meal or side dish.

Ingredients

  • 2-3 Tbsp Gourmet Garden Mediterranean Seasoning
  • 1 lemon zest and juice
  • 2-3 Tbsp olive oil
  • 400g bowtie pasta or other pasta shapes
  • 150-200g cabanossi sausage or spicy sausage, sliced
  • 1 cup red capsicum, deseeded and sliced
  • 100g green beans, trimmed and cut in half
  • 1 cup Wattie’s frozen Baby Peas
  • 100g rocket or small salad leaves

Method

1. In a jug or small bowl mix together the Gourmet Garden Mediterranean Seasoning , lemon zest, juice and olive oil and set aside.

2. Cook pasta according to the directions on the packet. While the pasta is cooking, fry sausage in a non-stick frying pan. Add the capsicum, beans, Wattie’s Baby Peas and cook for a few minutes until just tender.

3. When pasta is cooked, drain and return to saucepan. Toss through dressing. Stir in the sausage, vegetables and lastly rocket. Serve immediately as a light meal.

Tip:

For variation add different vegetables.
