These Lamb Koftas are a great excuse to get the barbecue going. Served with a tasty couscous salad and Greek-style Yoghurt Dressing, they’re sure to go down well in any household.
Greek Style Lamb Koftas
Ingredients
- Lamb Koftas
- 400g lean lamb mince
- 2 Tbsp chopped parsley
- 1 tsp crushed garlic
- 1 tsp ground cumin
- 1 1/2 tsp ground coriander
- 8 wooden kebeb skewers, soaked in cold water

Couscous Salad - 1 cup instant couscous
- 1 1/4 cups boiling water or vegetable stock
- 1/4 cup slivered almonds, toasted
- 1/2 cup dried apricots, chopped
- 1/4 cup chopped parsley
- 1/2 cup Eta Greek-style Yoghurt Dressing
Method
1. To make Lamb Koftas, mix together lamb mince, parsley, garlic, cumin and coriander. Season with salt and pepper.
2. Divide mixture into 8 balls. Form each ball around the pointed end of a skewer. Refrigerate for at least 30 minutes.
3. Barbecue koftas over medium heat until browned all over and just cooked through – about 6 minutes.
4. To make Couscous Salad, place couscous in a bowl. Pour in boiling water or vegetable stock. Leave to stand for 5 minutes. Fluff grains with a fork and leave to cool.
2. Mix through almonds, apricots and chopped parsley. Season to taste.
Serve Koftas on couscous salad and pour over Eta Greek-style Yoghurt Dressing. Serve with a green salad.
Tip:
Note: Koftas make great nibbles with drinks. Make them smaller and serve with Eta Greek-style Yoghurt Dressing as a dip.
